Smoky molasses baked beans, skillet style

- cast iron skillet
Ingredients
- 3 cups cooked beans (any variety you love) Feel free to use canned beans
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 – 2 TBS chopped salt pork (or 1 tbsp olive oil)
- 2 TBS molasses
- 1 TBS apple cider vinegar
- 1 tsp mustard
- 1 cup water or broth
- salt and pepper to taste
Instructions
- Warm a skillet over medium heat. Add the salt pork or olive oil.
- Sauté the onion and garlic until soft and fragrant, about 5 minutes.
- Let the mixture simmer, uncovered, for 12–15 minutes, stirring now and then, until the beans are glossy and the liquid has thickened into a sauce.
- Taste and season with salt and pepper.
