Smoky molasses baked beans, skillet style
Chantile Ferriera
A cast iron skillet turns simple beans into something special. Simmered with onion, garlic, and a spoonful of molasses, they thicken into a glossy sauce that’s equal parts hearty and comforting. Serve them warm with crisp salad greens and apple slices for a rustic, balanced meal.
- 3 cups cooked beans (any variety you love) Feel free to use canned beans
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 - 2 TBS chopped salt pork (or 1 tbsp olive oil)
- 2 TBS molasses
- 1 TBS apple cider vinegar
- 1 tsp mustard
- 1 cup water or broth
- salt and pepper to taste
Warm a skillet over medium heat. Add the salt pork or olive oil.
Sauté the onion and garlic until soft and fragrant, about 5 minutes.
Let the mixture simmer, uncovered, for 12–15 minutes, stirring now and then, until the beans are glossy and the liquid has thickened into a sauce.
Taste and season with salt and pepper.
To serve
Pair with a crisp green salad and slices of fresh apple for balance.
