Smoky molasses baked beans, skillet style

A cast iron skillet turns simple beans into something special. Simmered with onion, garlic, and a spoonful of molasses, they thicken into a glossy sauce that’s equal parts hearty and comforting. Serve them warm with crisp salad greens and apple slices for a rustic, balanced meal.

Ingredients
  

  • 3 cups cooked beans (any variety you love) Feel free to use canned beans
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 - 2 TBS chopped salt pork (or 1 tbsp olive oil)
  • 2 TBS molasses
  • 1 TBS apple cider vinegar
  • 1 tsp mustard
  • 1 cup water or broth
  • salt and pepper to taste

Instructions
 

  • Warm a skillet over medium heat. Add the salt pork or olive oil.
  • Sauté the onion and garlic until soft and fragrant, about 5 minutes.
  • Let the mixture simmer, uncovered, for 12–15 minutes, stirring now and then, until the beans are glossy and the liquid has thickened into a sauce.
  • Taste and season with salt and pepper.

To serve

Pair with a crisp green salad and slices of fresh apple for balance.

For deeper warmth, add a pinch of smoked paprika or allspice while simmering.
